This pre-Columbian drink continues to accompany communities across Latin America, from the Andean highlands to the tropical plains. <\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Origins and legends<\/strong><\/h2>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignright size-full is-resized\"><img fetchpriority=\"high\" decoding=\"async\" width=\"767\" height=\"500\" src=\"https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/23-JUNIO-CHICHA.jpg\" alt=\"\" class=\"wp-image-236388\" style=\"width:196px;height:auto\" srcset=\"https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/23-JUNIO-CHICHA.jpg 767w, https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/23-JUNIO-CHICHA-300x196.jpg 300w\" sizes=\"(max-width: 767px) 100vw, 767px\" \/><\/figure>\n<\/div>\n\n\n<p>Each country has woven its own story around this fermented corn drink. In <a href=\"https:\/\/visit-latin-america.com\/en\/p\/colombia\/\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Colombia<\/mark><\/a>, it is rooted in the Andean highlands of the <strong>departments of Boyac\u00e1 and Cundinamarca<\/strong>, where the <a href=\"https:\/\/visit-latin-america.com\/en\/bachue-the-goddess-of-fertility-mythology-of-the-muisca-indigenous-civilization\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Muisca <\/mark><\/strong><\/a>knew it as <em>fapqua<\/em>. One legend tells of an Indigenous woman, punished for infidelity, who found refuge by <strong>Lake Guatavita<\/strong> and discovered this fermented corn beverage there.  <\/p>\n\n\n\n<p>In <a href=\"https:\/\/visit-latin-america.com\/en\/p\/ecuador\/\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Ecuador<\/mark><\/a>, it is present both in <strong>Otavalo\u2019s <\/strong>communal rituals and in family celebrations, while in the Amazon, cassava chicha is a symbol of hospitality: it is offered to visitors as a sign of respect.<\/p>\n\n\n\n<div style=\"height:60px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Preparation and variations<\/strong><\/h2>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft size-full is-resized\"><img decoding=\"async\" width=\"826\" height=\"440\" src=\"https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/chicha-guinapo-arequipa_637619736778308702.jpg\" alt=\"\" class=\"wp-image-236397\" style=\"width:227px;height:auto\" srcset=\"https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/chicha-guinapo-arequipa_637619736778308702.jpg 826w, https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/chicha-guinapo-arequipa_637619736778308702-300x160.jpg 300w, https:\/\/visit-latin-america.com\/wp-content\/uploads\/2025\/08\/chicha-guinapo-arequipa_637619736778308702-768x409.jpg 768w\" sizes=\"(max-width: 826px) 100vw, 826px\" \/><\/figure>\n<\/div>\n\n\n<p>Generally homemade, its preparation varies from region to region. In <a href=\"https:\/\/visit-latin-america.com\/en\/p\/peru\/\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Peru<\/mark><\/a>, <em>chicha morada<\/em>, non-alcoholic and made from purple corn boiled with fruit and spices, has become a staple beverage.
