For the <strong>2026 <\/strong>edition, three new states \u2014 <strong>Jalisco, Puebla, and Yucat\u00e1n<\/strong> \u2014 will now be included in the inspectors\u2019 selection. This extension broadens the guide\u2019s geographical coverage, launched in the country in 2024, and confirms the growing attention given to Mexican regional cuisines.  <\/p>\n\n<p>With this new step, the guide will expand from <strong>six to nine evaluated territories<\/strong>, joining <strong>Mexico City, Oaxaca, Baja California, Baja California Sur, Quintana Roo, and Nuevo Le\u00f3n<\/strong>, which were already part of the selection.<\/p>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h2 class=\"wp-block-heading\"><strong>A Broader Snapshot of Mexican Gastronomy<\/strong><\/h2>\n\n<p><a href=\"https:\/\/guide.michelin.com\/mx\/es\/articulo\/michelin-guide-ceremony\/guia-michelin-mexico-estrellas-nuevas-2025\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">In its most recent selection<\/mark><\/a>, <strong>more than 180 restaurants<\/strong> were recognized. Iconic dishes such as <strong>birria<\/strong>, <strong>carne en su jugo<\/strong>, and <strong>torta ahogada<\/strong> form part of the local culinary identity, while new restaurants reinterpret traditional ingredients and techniques. <\/p>\n\n<p>In central Mexico, <strong>Puebla <\/strong>boasts one of the country\u2019s most renowned culinary traditions. Its cuisine reflects centuries of influences combining indigenous heritage, colonial contributions, and convent traditions, with emblematic dishes like <strong>mole poblano<\/strong> and <strong>chiles en nogada<\/strong>. <\/p>\n\n<p>Further southeast, <strong>Yucat\u00e1n<\/strong>\u2019s gastronomy stands out for its use of characteristic ingredients such as <strong>achiote <\/strong>and citrus, as well as traditional cooking techniques like <strong>pib<\/strong>, an underground method used, for example, to prepare <strong>cochinita pibil<\/strong>. This culinary heritage has also received international recognition: in <strong>2025<\/strong>, the state was named the <strong>Ibero-American Capital of Pre-Columbian Gastronomy<\/strong> at the <strong><a href=\"https:\/\/www.ifema.es\/en\/fitur\/what-is\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Fitur <\/mark><\/a>fair in Madrid<\/strong>, highlighting the Mayan culinary legacy. <\/p>\n\n<div style=\"height:60px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>When Gastronomy Becomes a Tourism Driver<\/strong><\/h2>\n\n<p>This expansion of the Michelin Guide comes at a time when gastronomy occupies an increasingly important place in Mexico\u2019s tourism offer. According to the <a href=\"https:\/\/www.gob.mx\/sectur\/en\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Ministry of Tourism of Mexico<\/mark><\/a>, nearly <strong>30% of international visitors\u2019 spending<\/strong> in the country is devoted to food and beverages. <\/p>\n\n<p><strong>The timing is not coincidental.<\/strong> In <strong>2026<\/strong>, Mexico will host several <strong>FIFA World Cup<\/strong> matches, notably in <strong>Mexico City, Guadalajara, and Monterrey<\/strong>.
